Getting to know Rachel Reid as a dietitian…
Where did you do your undergrad and internship?
Undergrad: Seattle Pacific University,
Dietetic Internship: Oregon Health and Science University.
What does a day at work look like for you?
During my internship, every day and every week looked different as I moved through my rotations. Every rotation taught me so much, and stretched me and challenged me in ways that I was not expecting. Since July 1st, studying for the RD exam has been my work. I try to get at least 4 good hours of studying in per day. I am scheduled to take the exam on September 9th!
What inspired you to become a dietitian?
I have always known that I wanted to be in a profession where I could help others in a state of need. Throughout my childhood, I changed my mind from veterinary medicine, to social work, to nursing. Once I entered college, I was at a loss for where I actually wanted to focus. I registered for an introductory nutrition class and a dietitian came to give a talk about her profession. After that lecture, all I wanted to be was a dietitian. It just made sense – I have always cherished good food, cooking, and fun family meals, and science had always been my favorite subject – yes I love biology, biochemistry, and microbiology! I am still so excited to become a dietitian and to work with people and the subject of food everyday. Truly, what could be better?
What books have shaped you and your practice the most?
Intuitive Eating by Evelyn Tribole: This was the first book that I read as a dietetics major in college. It has shaped my philosophy towards food, eating and body image. It is so healthy and I completely agree with the “non-diet approach” for sustainable weight loss.
Giada DeLaurentis Cookbooks: I grew up watching the Food Network and I have always wanted to have my own show! I love Giada’s recipes because they are vibrant, usually healthy, and incorporate many different colors and textures. She adores food and gets so excited when she talks about and makes food… I feel like we are of the same spirit in that regard! If only I could get clients to be that excited about making fresh, healthy meals!
In Defense of Food by Michael Pollan: I think that the first line in Michael Pollan’s book which reads “Eat food. Not too much. Mostly plants.” is a good, simplified nutrition message to give to the public. Although he doesn’t have all of the answers, I feel like he has a lot of good ideas for why our nation has become as unhealthy as it is, and some good suggestions for how to overcome some of these issues.
Pride and Prejudice by Jane Austen: I read this book in high school and fell in love it. I love the character Elizabeth Bennett. She is smart, witty and independent – the type of woman I am inspired to be. Jane Austen is a brilliant author who inspires me to pursue my passions in life, and to do so regardless of other’s limiting expectations.
What websites and/or journals do you frequently visit for nutrition information?
American Dietetic Association’s Evidence Analysis Library – Definitely important when you are a student!
Do you enjoy cooking? Have you discovered a favorite recipe recently?
I adore cooking! A recent recipe that I made and just loved is from Ina Garten (another favorite Food Network chef). It’s called Spring Green Risotto. (Click for recipe)
Tell us about a ‘dietitian’ moment you’ve had recently.
I have those all the time! Recently, I was out to lunch with a bunch of meat-loving men, and I ordered a dish called “Tofu Happiness”. It was filled with veggies, brown rice, tofu and rice noodles and it was delicious. As the steaming bowl of goodness came out and was placed in front of me, I began exclaiming about all of the different nutrients that this dish was providing me. All of those men around me laughed and rolled their eyes, but I feel like they got some nutrition education that may have stuck a little.
Getting to know Rachel…
How did you end up in Portland?
I grew up in Beaverton and my entire family lives in the Portland area. I came back to Portland from Seattle for my internship and plan on living in this area permanently.
In regards to a balanced life, who inspires you most?
My grandparents have been an inspiration to me when it comes to living a well-rounded, healthy, and beautiful life. They have been through so much in their life – both wonderful, joyous times, and difficult, heartbreaking times. I have learned that these life experiences require you to be grounded on things that are real and lasting in order to live through them gracefully. My grandparents root themselves firmly in their relationships with family and friends, make laughter and living life to the fullest a priority, place value on excercise and health, and live generously at all times. They are an inspiration!
What keeps your life balanced?
God. My relationships. My dog. Family dinners. Exercise. Cooking delicious, nutritious meals. Weekend trips to my family’s beach house. Going on spontaneous adventures – it keeps life entertaining and exciting!
What’s on your bucket list?
- Run a half marathon
- Experience as many of Portland’s greatest restaurants as possible – I’ve lived here my whole life and have yet to experience so many of the restaurants that we are famous for!
- Hike the Inca Trail to Machu Picchu.
- Travel back to India and travel the whole country (starting in the Himalayas and ending in Kerala (Southern India, also known as land of the gods).
